Our kombucha

Flavours

We’ve crafted our flavours to best showcase our unique ingredients, including several wild plants that we harvest ourselves (staghorn sumac cones, eastern white cedar fronds, candy, swiss and spear mints, and young spring spruce tips).

All of our kombucha starts with a custom blend of loose leaf organic green and black teas, organic cane sugar, and our own live kombucha culture (sometimes called a SCOBY).

We precisely ferment each batch, then flavour with high-quality whole fruits and botanicals blended directly into the kombucha.  

Once flavoured, we ferment the mixture a second time to ensure a perfect sippable balance in every bottle. 

This method delivers intensely delicious and nutrient rich buch on a completely different level than kombuchas flavoured with concentrates, juices, tea blends, or “natural” flavours.  

Lastly, we filter and lightly carbonate, leaving behind living beneficial probiotic and prebiotic yeasts and bacterias in every bottle.

Sustainability

We believe that lowering our environmental impact and supporting other organizations in our community are two of the most important things we can do as a small business, not just for our community but for the world, and we built our business with those values in mind! 

We brew and bottle by hand, without energy-intensive equipment and in a shared co-operative workspace, The Kitchen Collective! 

All of our ingredients are sourced as locally and organically as possible, with over 85% of the produce and botanicals we use for flavouring being grown pesticide-free, bought directly from the farmer, or foraged by us!

Our base teas and cane sugar are fair-trade, organic, and sourced from member-owned co-operatives (Camino in Peru and Nepal Tea Collective in Nepal). 

All of our products come in glass bottles with either a $1 or $5 deposit, so that customers can participate in our sustainable efforts! Every bottled returned is sanitized, refilled, and put back in circulation. As long as bottles are returned or recycled correctly, there is NO source of garbage in our packaging!

    Delivery

    Every second Wednesday, we deliver door-to-door in Hamilton, Ancaster, Dundas, Waterdown, Stoney Creek, Oakville and Burlington! Please contact us if you are outside of these areas and are interested in purchasing.


    Our flagship flavours (Blackberry Sumac, Blueberry Mint, Cranberry Spruce Tip, Lemon Ginger, Raspberry Lavender, Rhubarb Rose, and Sour Cherry Cedar) are available in:

    • Growlers - $11 (HST included) for 1 litre, plus a $5 bottle deposit ($14.50 total with no bottle returns)

    • 6 Packs - $28 (HST included) for 6 355mL bottles of any flavour(s), plus a $6 bottle deposit ($34 total with no bottle returns)

    • 12 Packs - $52 (HST included) for 12 355mL bottles of any flavour(s), plus a $12 bottle deposit ($64 total with no bottle returns)

    Escarpment Kombucha Co. is dedicated to hand-crafting delicious fermented tea from locally sourced, organic, and foraged ingredients.

    We live and work on the traditional territory of the Haudenosaunee and Anishnaabe peoples. We thank all the generations who have taken care of this land since the beginning.
